Restaurant patrons’ preferences are in sync with nationwide findings
STATEN ISLAND, N.Y. – A national survey identifying top restaurant trends for 2014 shows that the same culinary preferences that garnered the highest points also prevail here.
It so happens that the perennially most popular foods can be found on the menus of The Mansion Grand, featuring Alissia’s Cafe, in Great Kills.
The study compiled responses from some 1,300 chef members of the American Culinary Federation (ACF) and was published online by the National Restaurant Association.
The five top-ranking perennial trends were fried chicken, Italian cuisine, frying, barbecue, and Eggs Benedict.
The survey included questions about other trends, as well. Fifty-nine percent of the chefs said they make efforts to adjust dishes and recipes to be more healthful, while a third said they cook with nutrition in mind, although not all recipes are easily adjusted.
ACF’s president, Thomas Macrina, said “Chefs recognize that nutrition is a vital component of the foodservice industry, and constantly revise and update recipes to reflect the concerns and desires of a diverse group of consumers who are looking for good food choices to best meet their nutrition and other needs.”
The current top menu trends have been gaining momentum for several years, indicating that these wider themes influence the national culinary scene, the Association said.
